  Yam Protein Pancakes  
         
 

INGREDIENTS

1 medium baked Yam
1 scoop protein powder (Try: BioX Extreme Power Whey Isolate Vanilla flavour)
¾ cup egg whites
1 tsp. Cinnamon
1 tsp. Vanilla Extract
½ tsp. Baking Powder
½ tsp. Baking Soda
¼ cup peeled chopped apple (Try: Granny Smith)
non-stick cooking spray

 

Top with 2 Tbs. Sugar free syrup or try agave nectar. Agave nectar is made from the juice of the agave plant. It has a sweet, mild flavour and is low on the glycemic index. It is useful for people who are diabetic, have insulin resistance, or are simply watching their carbohydrate intake.

DIRECTIONS

  1. 1.      Bake yam at 400*C for approximately 1 hour (until yam starts to caramelize).
  2. 2.       Peel skin and mash in mixing bowl.
  3. 3.       Mix Protein powder with yam until clump free.
  4. 4.       Mix all remaining ingredients into yam mixture.
  5. 5.       Heat griddle to medium low heat.
  6. 6.       Spray pan with non stick cooking spray.
  7. 7.       Pour mixture into pan and cook , each pancake should be about the size of your palm.
  8. 8.       Cook for 2-4 minutes per side, tiny air bubbles are a good indicator of when it is time to flip.
